Gluten free Pancakes

If you pass by my apartment in Sunday’s you can smell the fresh made pancakes… It was right after I found the Bob’s Red Mill pancake and waffle mix. My favorite combination with pancakes are strawberries, banana and blueberries… Oh of course you cannot keep away the legend of Nutella from this combination. So if you like to add to your favorite fruits or nuts go ahead..

Ingredients:

1 cup of Bob’s Red Mill Pancake and Waffle Mix

3/4 cup soy milk

1 tablespoon olive oil

1 large egg

For the top:

Fresh strawberries

Bananas

Blueberies

Cooking Instructions:

Mix all the ingredients in a bowl and mix it well. If you want to cook blueberries and add walnuts mix them as well. After that wait for half an hour. It makes the dough more condensed and well mixed. Heat the pan a lot and put olive oil on to it. Before making new ones do not forget to grease the pan with olive oil. Wait until the pancake gets little bit brown then turn aside. Put your favorite combination of pancake as your taste and voila!
